What I love the most is to keep my family healthy and sometimes its super difficult in the busy world. When I became a new mom (three years ago) I had no idea how to balance a newborn, graduate school, and cooking. So we ate out more than half the time. It was so bad. You don't know who cooks your food, how they cook it, and what they put in it most of the time! I began to search for ways to make a lot of food over the weekend so I can pack lunches to go and get through the week. Fast forward I finally found how to make sure that we are eating healthy and home cooked food throughout the week. We eat home made food about 95% now (5% is left for date nights or an end of the week splurge). This doesn't just save money but also saves your health. I want to tell you about how I finally got myself to pack lunches for my husband and I. There is a lot of preparation that has to go into it but very doable if you have the right appliances. To prepare everything I use a steamer and an instant pot (shown below). Very few items I make on the stove. Prepare it on Sunday night for 3-5 days depending on what you're making. My usual go to rule is prep for 3 days and mid-week make another batch.
My meal prep for this week included:
I washed and threw in 6 chicken breasts into the instant pot (my dog eats chicken breast too) and covered it with water. Set for 15 minutes under the poultry option.
Then I washed all of the veggies and threw them into the steamer for 7 minutes (we like the carrots crunchy and it doesn't kill all the vitamins).
I cooked the buckwheat stove top. I buy them at the Russian store. They already are in bags and you just throw them into boiling water for 10 minutes.
I cooked the Spaghetti squash after the chicken was done and transferred from the instant pot. I cut it in half and covered it with water. Set the instant pot for Manual 5 minutes. Quick release and take it out right away. I use a fork to get it out and throw it on a frying pan for 5 minutes to cook with different spices (oregano, basil, sea salt, turmeric).
Add everything into meal prep trays (I use Meal Prep Haven and love them) and store in the fridge for the week!
